Outside the Castle is the place where you first go into the game, the area features a nice sunny day with birds chirping. It also has the 120 star cannon. Which leads you to the top of the castle and where Yoshi is.
Outside the Castle is the starting location when creating a new file, reopening the game, or dying anywhere within the castle. It features a sunny environment with birds and water sfx in the background. There is also a cannon next to the lake that unlocks at 120 Stars, which is meant to allow you to get onto the castle roof. However, it can be bypassed with precise movement. It contains one secret stage, Vanish Cap Under the Moat.

Now Inside the Castle is where you go ahead and go into the paintings to go ahead and play courses. The 1st floor has 4 courses and 1 secret star course, BOB (Bob-Omb Battlefield), WF (Whomp's Fortress), CCM (Cool Cool Mountain) and JRB (Jolly Roger Bay) and Peach's Secret Slide. Then, you go into the Star Door, which requires 8 stars to get to, then you get to BitDW (Bowser in the Dark World), this is where the first bowser fight is. Then there is a door to the 2nd floor, which has all of the rest of the mid-end stages. There's also the basement, which you can get to by going through the wooden doors, and going down below, it requires the Bowser Key, or you can do 1 Key (which doesn't require the first bowser fight).
The 1st floor is the introductory area of the castle. It contains 4 main courses (Bob-omb Battlefield, Whomp's Fortress, Cool, Cool Mountain, and Jolly Roger Bay), and three secret courses (The Princess's Secret Slide, The Secret Aquarium, and Tower of the Wing Cap). The Star Door on this floor requires 8 stars, and leads to Bowser in the Dark World, the first Bowser stage. Additionally, there is a key door to the 2nd floor, as well as one leading to the basement (the intended next area) and a regular door leading into the courtyard.

The Basement has another secret star course housed to 3 courses which are SSL (Shifting Sand Lands), LLL (Lethal Lava Land), HMC (Hazy Maze Cave) and VCutM (Vanish Cap under the Moat), aswell as there's also another Star Door which requires 30 stars and leads to the 2nd Bowser Fight, which is required to continue further into the game. The key cannot be skipped.
The Basement has 4 main courses (Shifting Sand Land, Lethal Lava Land, Hazy Maze Cave, and Dire, Dire Docks). It also contains the pillars normally required to unlock Vanish Cap Under the Moat, although they can be bypassed with moat door skip. And finally we have the 3rd floor, which has 2 courses, 1 secret course and 1 star door, which leads into the final Bowser fight, the last 2 courses are TTC (Tick Tock Clock) and RR (Rainbow Ride). The last star door can be accessible without needing any stars because it leads to the Endless Stairs, which by normal play would not be possible to go through, on the other hand, BLJ'ing to the top of the endless stairs gets you to the entrance to Bowser's Final Battle.
The 3rd floor contains 2 main courses, Tick Tock Clock and Rainbow Ride, along with one secret stage, Wing Mario over the Rainbow. Although there are endless stairs on this floor that require 70 stars to pass, it can be easily skipped using BLJs. These stairs lead to the final Bowser stage, Bowser in the Sky.

The Courtyard
Level courses
Of course, we might have missed something, that is the peach's courtyard, and there, you might some ghosts, which can get you to BBH (Big Boo's Haunt), there's been many theories about the statue in the courtyard, most of which made the fake Luigi theories people made back then.
